Make-ahead breakfast bites for a satisfying week of mornings. Easy prep, delicious reheated.
Ingredients:
  • cooking spray
  • 3 cups frozen hash brown potatoes, thawed
  • 0.5 cup Cheddar cheese
  • 0.25 teaspoon salt
  • 1 tablespoon canola oil
  • 1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
  • 0.25 cup diced red bell pepper
  • 0.25 cup diced white onion
  • 1 (4 ounce) can chopped green chilies
  • 12 large eggs
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Gently coat a muffin tin with cooking spray.
  • Combine thawed hash browns, cheese, salt, and pepper in a bowl. Press the mixture into the muffin cups, forming "cups." Bake until golden brown around the edges, about 20 minutes.
  • Heat oil in a small frying pan over medium-high heat for 30 seconds. Add Jimmy Dean sausage and cook for 8-10 minutes until browned, stirring often to break it up. Drain excess grease.
  • Combine the cooked Jimmy Dean sausage with the bell pepper, onion, and green chili in a bowl.
  • Remove the muffin tin from the oven with care. Fill each cup halfway with the sausage and pepper mix, then crown with a raw egg on top of each.
  • Continue baking the muffin tin in the oven for approximately 10 minutes, or until the eggs reach your desired level of doneness.
  • For best taste, serve fresh or refrigerate. To reheat, warm in the microwave or oven at 350°F (175°C) for 10 minutes.
