Try this delicious breakfast grilled sandwich with hash browns, eggs, bacon, and cheese all in one mouthwatering bite. Swap in sausage or ham for a tasty twist!
Ingredients:
  • 4 large potatoes, peeled and quartered
  • 4 slices bacon
  • 1 cup shredded Cheddar cheese
  • 4 eggs, beaten
  • 2 tablespoons vegetable oil
  • salt and pepper to taste
Instructions:
  • In a saucepan, cover potatoes with water and bring to a boil. Cook for about 5 minutes until slightly tender. Drain, cool under running water, and then pat dry before grating into a large bowl.
  • Divide the potato shreds in half and shape each portion into a 6-inch circle on a square of waxed paper.
  • Fry bacon in a skillet until evenly browned, then let drain on paper towels. Cook lightly scrambled eggs in a nonstick skillet over low heat until slightly wet.
  • In a large skillet over medium heat, warm the oil. As the oil heats up, layer the egg, bacon, and cheese evenly on one potato circle. Top with the other circle, using a piece of waxed paper to help. Transfer the sandwich to the skillet and fry until golden brown on both sides, about 10 minutes each. Cut into wedges and serve hot.
