Elevate your camping experience with this hearty mountain man breakfast: Sausage, eggs, and hash browns cooked over an open flame in a Dutch oven.
Ingredients:
  • 1 pound mild pork sausage (such as Jimmy Dean®)
  • 1 medium onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 (2 pound) package frozen shredded hash brown potatoes
  • 12 large eggs, beaten
  • 1 (16 ounce) package shredded Cheddar cheese
Instructions:
  • Start a crackling campfire and let the flames dance until a glowing bed of coals forms. Set a grate over the fiery bed.
  • Preheat a 12-inch cast iron Dutch oven on the grill. Cook sausage, onion, and garlic until sausage is browned, onion is translucent, about 5 to 7 minutes. Mix in hash browns and bell peppers until combined. Cook until hash browns are hot and peppers are tender, stirring occasionally, for about 15 minutes.
  • Gently pour the beaten eggs into the Dutch oven. Cover and cook over hot coals for around 40 minutes until eggs are set. Sprinkle with Cheddar cheese, cover, and cook for an additional 5 minutes until melted.
