Smoked Salmon Hash

Savory hash browns topped with smoked salmon, creamy sour cream, tangy horseradish, and fresh herbs.
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 pounds Yukon gold potatoes, peeled and diced into 1/4-inch cubes
  • 1 cup chopped onion
  • 4 ounces hot-smoked salmon, broken into flakes
  • 2 tablespoons sour cream
  • 2 teaspoons prepared horseradish
  • 1 teaspoon Dijon mustard
  • 2 tablespoons chopped chives or green onion greens
  • 1 tablespoon minced fresh parsley
  • Salt and black pepper to taste
  • Lemon wedges and extra sour cream for serving
Instructions:
  • Heat oil in a large cast iron frying pan over medium heat. Add potatoes and onions, coating them with the oil. Spread out in an even layer and sprinkle with salt. Cook, flipping every 2-3 minutes with a spatula, until browned and cooked through, about 15-20 minutes.
  • Combine salmon, sour cream, horseradish, mustard, chives, and parsley in a bowl while the potatoes are cooking.
  • Mix the salmon into the cooked potatoes until well combined. Season with salt and pepper. Allow the mixture to rest in the pan for 5 minutes to heat through. Add a splash of lemon juice if desired and a dollop of sour cream on the side. Serve with a side of runny eggs.
