Fluffy omelettes - ideal for brunch or a light lunch, ready in minutes.
Ingredients:
  • 18.40 gm oil
  • 500g zucchini, grated
  • 3 spring onions, chopped
  • Salt and freshly ground black pepper, to taste
  • 4 eggs
  • 125ml Cooking Cream
  • 20g butter
  • Bulla Crème Fraiche, to serve
  • 200g smoked salmon
Instructions:
  • In a spacious non-stick skillet, heat oil and sauté zucchini for 6-7 minutes until golden. Add spring onions and seasonings, then set aside to keep warm.
  • Combine the eggs and cream until smooth. Melt butter in a frying pan. Divide the egg mixture into 8 greased egg rings and cook covered over low heat for 3 minutes or until almost set. Gently flip and cook until done. Serve the omelettes on plates after removing the egg rings.
  • For enhanced flavor, generously layer zucchini slices, a dollop of silky creme fraiche, and delicate smoked salmon on top of each omelette. Serve promptly for best enjoyment.
