Brunch elegantly with gourmet smoked salmon omelettes.
Ingredients:
  • 40.00 ml plain flour
  • 257.50 gm milk
  • 6 eggs
  • 40.00 ml finely-chopped fresh chives
  • olive oil cooking spray
  • 117.50 gm sour cream
  • 1 lemon, rind finely grated, juiced
  • 20.00 ml chopped fresh dill leaves
  • 400g sliced smoked salmon
Instructions:
  • In a medium jug, combine flour and 2 tablespoons of milk to create a smooth paste. Mix in eggs, the rest of the milk, and chives until smooth. Heat a 20cm non-stick crepe or frying pan over medium-low heat and lightly coat with oil spray.
  • Pour 1/4 cup of mixture into pan, swirling to thinly cover the base. Cook on one side only for 1 minute or until set, then transfer to a plate. Repeat with remaining mixture to make a total of 8 omelettes.
  • In a bowl, combine sour cream, 1 teaspoon of lemon rind, 2 teaspoons of lemon juice, dill, salt, and pepper. Mix well.
  • Place a layer of smoked salmon on top of the omelette, then generously drizzle with a creamy sour cream mixture. Gently roll the omelette to create a delightful and flavorful filling inside.
  • Cut the omelettes into diagonal slices before plating. Enjoy!
