Quick and delicious crab omelette paired with zesty avocado salsa. Ready in under 20 minutes!
Ingredients:
  • 5 Brand free range eggs
  • 40.00 ml snipped chives
  • 8.00 gm brown sugar
  • 36.40 gm Brand pure olive oil
  • 170g can Brand crab meat, drained
  • 1 avocado, diced
  • 250.00 ml mint leaves, torn
  • 1 eschallot, sliced
  • Zest and juice of 1 lime
  • 4.50 gm white sugar
  • Drop sesame oil
  • Extra lime cheeks, to serve
Instructions:
  • In a small bowl, mix together avocado, mint, and eschallot. Combine lime zest, lime juice, white sugar, and sesame oil. Pour over the salad and toss to combine.
  • Whisk eggs, chives, and brown sugar in a small jug until combined. Heat oil in a medium frying pan over high heat. Pour in egg mixture and use a spatula to guide the edges towards the center as it cooks, allowing the uncooked egg to flow to the pan's edges. Cook for 2-3 minutes until the base is fully set.
  • Move the frying pan to a hot grill and cook for 1-2 minutes until puffed and set. Sprinkle crab meat over one side of the omelette, fold it in half, cut in half, and transfer to serving plates. Garnish with salsa and serve with lime wedges.
