Versatile corned beef is delicious hot with veggies or cold on a meat platter or sandwich.
Ingredients:
  • 1.5kg corned silverside (see note)
  • 8 whole cloves
  • 1 brown onion, peeled, root intact
  • 26.80 gm golden syrup
  • 8 small pickling onions
  • 4 large carrots, cut into 12 pieces
  • 1 minicab, cut into quarters (see note)
  • 5 desiree potatoes, cooked, mashed, to serve
Instructions:
  • Place the silverside in a large saucepan and cover it with cold water. Press cloves into the onion and add it to the saucepan.
  • Place a saucepan on low heat and bring it to a gentle boil without covering. Use a spoon to skim off any fat from the surface and discard it. Partially cover the saucepan and let it cook for an additional 30 minutes.
  • Combine syrup, onions, and carrots in a saucepan. Simmer uncovered for an hour. Stir in cabbage, cover, and cook for an additional 10 minutes until cabbage is tender.
  • Take out the cabbage, onions, and carrots. Keep them warm. Set aside the corned beef. Let it rest covered for 15 minutes, then slice thinly. Enjoy the beef with the vegetables or in a sandwich.
