Flavorful ground beef quesadillas filled with comforting goodness, perfect for any meal.
Ingredients:
  • 1 medium potato, peeled and diced
  • 1 teaspoon vegetable oil
  • 1 pound lean ground beef
  • 0.5 cup diced red bell pepper
  • 0.5 cup diced onion
  • 2 cloves garlic, minced
  • 1 (8 ounce) can tomato sauce
  • 0.25 cup water
  • 2 tablespoons olive brine
  • salt and ground black pepper to taste
  • 0.5 cup sliced pimento-stuffed green olives
  • 3 tablespoons raisins
  • cooking spray
  • 12 (8 inch) flour tortillas
  • 1 cup shredded Mexican cheese blend
Instructions:
  • In a large pot, immerse diced potatoes in salted water and bring to a boil. Simmer over medium-low heat until tender, about 8-10 minutes. Drain well.
  • In a large skillet over medium heat, add oil. Add cooked potato and brown on all sides for approximately 3 minutes. Set aside.
  • Brown the ground beef in a skillet until no longer pink, stirring occasionally for 4 to 5 minutes. Add in bell pepper, onion, and garlic; cook until softened for 3 to 4 minutes. Remove excess fat from the pan before proceeding.
  • Mix together tomato sauce, water, olive brine, oregano, salt, and pepper until thoroughly combined. Then add olives, raisins, and reserved potatoes; stir until well incorporated. Simmer picadillo on low heat for 8 minutes, stirring occasionally.
  • Preheat a nonstick skillet over medium heat and lightly coat with cooking spray. Add a tortilla to the skillet and cook until golden brown, about 1 to 2 minutes per side.
  • Spread a generous portion of the hot, flavorful picadillo onto one half of the tortilla, then sprinkle Mexican cheese on top. Fold the tortilla in half and press down gently with a spatula. Allow the cheese to melt to perfection for about 1 minute. Repeat the process to cook the rest of the quesadillas.
  • Cut each quesadilla into 3 deliciously satisfying triangles for easy serving and elegant presentation.
