Beef and bean quesadillas

Spicy beef and bean quesadillas bursting with veggies for a quick and delicious Mexican meal.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, chopped
  • 250g beef mince
  • 2 carrots, chopped
  • 187.50 ml tomato passata
  • 420g can Heinz® Beanz Creationz™ Fiery Mexican Style Beanz
  • 120g (1 cup) frozen peas
  • 8 flour tortillas
  • 300g (3 cups) pizza cheese
  • Sour cream, to serve
  • 200g grape tomatoes, quartered
  • 2 shallots (green onions), chopped
  • 18.20 gm extra virgin olive oil
Instructions:
  • In a large pan over medium heat, sauté onion until soft for about 5 minutes. Increase heat to high, then add mince and brown it for 5 minutes, making sure to break up any lumps. Stir in carrots, passata, and Beanz Creationz™, then bring to a boil. Lower the heat, cover the pan, and simmer for 15 minutes until the mixture reduces slightly. Finally, add peas, stir, and take off the heat.
  • Preheat the grill to medium heat and cover 2 large baking trays with foil. Place 2 tortillas on each tray. Add 2/3 cup of mince mixture and 1/4 cup of cheese onto each tortilla. Place another tortilla on top and gently press down. Sprinkle 1/2 cup of cheese over each quesadilla. Grill for 8-10 minutes until golden and bubbly.
  • Mix together the salsa ingredients and season generously. Serve the quesadillas on plates, topped with sour cream and salsa.
