Savor these flavorful cheesy beef tortillas with spicy chipotle black bean salsa.
Ingredients:
  • 55.20 gm vegetable oil
  • 500g Brand Minced 4 Star Beef
  • 4.80 gm salt
  • 1/2 tsp pepper
  • 453g Black Bean & Chipotle Salsa
  • 8 Multi-Grain Tortillas
  • 200g tasty cheese, grated
  • Cooking spray
  • 6 tomatoes, finely diced
  • 1 red onion, finely diced
  • 62.50 ml fresh coriander, chopped
  • 1-2 mild green chillies, seeded and finely chopped
  • 18.20 gm olive oil
Instructions:
  • Mix all the fresh ingredients for Pico de Gallo together and refrigerate until cold.
  • In a frying pan over medium-high heat, heat oil. Cook mince for 5-6 minutes, then season with salt and pepper before transferring to a medium-sized bowl.
  • Spread a generous amount of Mission Black Bean & Chipotle Salsa over one side of each Mission Multi-Grain Tortilla. Top with mince and a sprinkle of cheese. Fold the tortillas in half to form a "half moon" shape and gently press down.
  • Spray a frying pan or skillet with cooking spray, then cook quesadillas over medium heat for 2-3 minutes on each side until golden brown and the cheese is melted.
  • Cut each quesadilla into 3 tempting wedges and generously crown with zesty Pico de Gallo.
