Fiery black bean dip with Muir Glen fire-roasted tomatoes and chipotle, perfect for dipping Food Should Taste Good multigrain tortilla chips.
Ingredients:
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, well drained
  • 1 can (15 oz) black beans, drained, rinsed
  • 2 tablespoons finely chopped chipotle chiles in adobo sauce (from 7-oz can)
  • 1/3 cup diced red onion
  • 1/4 cup crumbled cotija cheese
  • 3 tablespoons chopped fresh cilantro leaves
  • 4 teaspoons lime juice
  • 1/2 teaspoon sea salt
  • 2 tablespoons roasted and salted pepitas (pumpkin seeds)
  • Food Should Taste Good™ multigrain tortilla chips, as desired
Instructions:
  • Combine in a medium bowl the tomatoes, black beans, chipotle chiles, red onion, half of the cheese, cilantro, lime juice, and sea salt. Transfer to a serving bowl and top with the rest of the cheese and pepitas for garnish.
  • Enjoy with a side of crispy potato chips.
