Beef and Bean Tamale Pie

Exciting fusion dish: Cheesy cornbread with enchilada sauce, topped with seasoned beef, beans, and fresh toppings - a flavor explosion in one skillet!
Ingredients:
  • 1 pouch (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 1/3 cup milk
  • 2 tablespoons butter, melted
  • 1 egg
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 2 cups shredded Mexican cheese blend (8 oz)
  • 1 lb lean (at least 80%) ground beef
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 2 cloves garlic, finely chopped
  • 2/3 cup water
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 can (15 oz) pinto beans, drained, rinsed
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • Fresh toppings, if desired (chopped tomatoes, cilantro, sour cream, salsa, diced avocado)
Instructions:
  • Preheat oven to 400°F. Coat a 10-inch cast-iron skillet with oil and place in the oven for about 10 minutes until hot.
  • Combine muffin mix, milk, melted butter, and egg in a medium bowl until just moistened (batter will be lumpy). Gently fold in green chiles and 1 cup of cheese. Transfer mixture to a hot skillet and bake for 16-18 minutes until lightly golden around edges. Remove from oven and reduce temperature to 350°F.
  • In a 10-inch nonstick skillet, sauté beef, bell pepper, onion, and garlic over medium-high heat for 5 to 7 minutes until beef is cooked through. Drain any excess fat. Stir in water and taco seasoning mix, bring to a boil, then simmer uncovered for 3 to 4 minutes until thickened. Add pinto beans and mix well.
  • Poke holes in cornbread using the end of a wooden spoon, placing them about 1 1/2 to 2 inches apart. Pour enchilada sauce over the cornbread, ensuring the sauce fills the holes. Spread the beef and bean mixture over the sauce and sprinkle with the remaining 1 cup of cheese. Cover with foil sprayed with cooking spray and bake for 25 to 30 minutes until bubbly around the edges and the cheese is melted.
  • Allow dish to rest for 10-15 minutes before enjoying. Top with your preferred fresh garnishes.
