Savor the flavors of Mexico in this comforting one-skillet tamale bake featuring ground beef, black beans, and a cheesy cornbread topping.
Ingredients:
  • 2 tablespoons vegetable oil
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.5 pound ground chuck
  • 2 cloves garlic, chopped
  • 1 (15 ounce) can black beans, drained
  • 1 (8 ounce) jar pasilla chile cooking sauce (such as Herdez®)
  • 1 cup canned diced tomatoes, drained
  • 2.5 cups water
  • 0.5 cup cornmeal
  • 2 ears corn, kernels cut from cob
  • 1 cup shredded Monterey Jack cheese
  • 1 jalapeno pepper, finely chopped
Instructions:
  • Preheat the oven to 375°F (190°C).
  • 1. Heat oil in a cast iron skillet until shimmering, then add onion, green pepper, and salt. Sautee until soft, about 5 minutes. Next, add ground chuck and garlic; cook until meat is browned, about 5 minutes. If desired, drain fat. Finally, stir in beans, chile cooking sauce, and tomatoes. Simmer until sauce thickens slightly, about 5 minutes.
  • 1. Boil water in a medium saucepan. Stir in cornmeal and salt; cook until thick and creamy, approximately 2 minutes. Remove from heat and mix in corn, Monterey Jack cheese, and jalapeno. Stir thoroughly before spreading over the meat mixture.
  • Bake in the oven until the top turns golden and the filling bubbles, approximately 45 minutes. Allow it to sit for 15 minutes before serving.
