Black Bean and Corn Salad

Choose your preferred salsa heat level. Enjoy this vibrant salad with grilled proteins.
Ingredients:
  • 1 cup frozen corn
  • 1 can (15 ounces) Progresso™ black beans, drained, rinsed
  • 1/4 cup chopped fresh cilantro or parsley
  • 1/4 cup thick & chunky salsa
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 4 lettuce leaves
Instructions:
  • Prepare the corn as directed on the package. Cool thoroughly under cold running water, ensuring it is well-chilled. Drain excess water.
  • Combine all ingredients in a medium bowl, excluding the lettuce. Serve by placing a lettuce leaf on each of the 4 salad plates and topping them with the bean mixture.
