Tangy bean and veggie salad with zesty cilantro vinaigrette. Marinate overnight for maximum flavor explosion!
Ingredients:
  • 0.5 cup balsamic vinaigrette salad dressing
  • 0.25 teaspoon seasoned pepper
  • 0.25 teaspoon dried cilantro
  • 0.125 teaspoon ground cayenne pepper
  • 0.25 teaspoon ground cumin
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (15 ounce) cans whole kernel corn, drained
  • 0.5 cup chopped onion
  • 0.5 cup chopped green onions
  • 0.5 cup red bell pepper, chopped
Instructions:
  • Combine vinaigrette, seasoned pepper, cilantro, cayenne pepper, and cumin in a small bowl to make a flavorful dressing. Set aside.
  • Combine beans, corn, onion, green onions, and red bell pepper in a large bowl. Drizzle with dressing, mix well, and refrigerate overnight. Remember to give it a final toss before serving.
