Quick and flavorful bean salad perfect for BBQs and Tex-Mex meals. Ready in 15 minutes.
Ingredients:
  • 1/2 cup balsamic vinaigrette dressing
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1/4 teaspoon ground cumin
  • 2 cans (15 oz each) black beans, drained, rinsed
  • 1 can (11 oz) whole kernel sweet corn
  • 1 small onion, chopped (1/2 cup)
  • 8 medium green onions, chopped (1/2 cup)
  • 1 small red bell pepper, chopped (1/2 cup)
Instructions:
  • Combine dressing, pepper, cilantro, red pepper, and cumin in a small bowl. Set aside.
  • Combine all remaining ingredients in a large bowl. Toss with the dressing until well coated. Refrigerate for at least 1 hour or overnight to enhance the flavors. Right before serving, stir the mixture to ensure the beans and corn are evenly coated with dressing.
