Whip up delicious beef burritos for a crowd-pleasing Mexican meal, perfect for any occasion!
Ingredients:
  • 1 small brown onion, finely chopped
  • 500g lean beef mince
  • 2.50 gm ground cumin
  • 2.50 gm smoked paprika
  • 1/4 tsp chilli powder
  • 1 red capsicum, chopped
  • 44.40 gm tomato paste
  • 84.15 gm beef stock
  • 300g can red kidney beans, drained, rinsed
  • 125.00 ml coriander leaves, chopped
  • 8 flour tortillas (see note)
  • 187.50 ml grated cheddar cheese
  • Bulla Light Sour Cream, to serve
  • Salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C. In a large frying pan over medium-high heat, heat oil and cook onion and garlic until onion is tender, about 5 minutes. Add the mince and cook until browned, stirring occasionally, for about 3 minutes.
  • Enhance flavors with cumin, paprika, and chili powder, cooking until aromatic, about 1 minute. Add tomatoes, capsicum, tomato paste, and stock. Bring to a boil, then simmer uncovered over medium-low heat for 10 minutes until the sauce thickens. Finish by stirring in beans and fresh coriander.
  • Heat up tortillas as instructed on the package. Spoon the beef mixture evenly onto each tortilla in the center. Roll up the tortillas to secure the filling. Arrange the rolled tortillas in a well-greased baking dish and sprinkle with cheese.
  • Bake until cheese is gooey and burritos are golden brown. Enjoy with a dollop of sour cream and fresh salad greens.
