Beef, mushroom & cheese quesadillas with smashed avocado

Succulent beef, mushroom, and cheese quesadillas with creamy smashed avocado - a flavorful spin on classic Mexican cuisine.
Ingredients:
  • 20g butter
  • 1/2 medium brown onion, finely diced
  • 200g button mushrooms, roughly diced
  • 1 tsp finely chopped garlic
  • 500g packet Butcher 3 star beef mince
  • 1/2 tsp dried oregano
  • 1.25 gm ground cumin
  • 2.50 gm smoked paprika
  • 10 regular sized tortillas
  • 250g extra tasty cheddar, grated
  • 2 avocados, stone removed
  • Juice of 1 lime
  • 20.00 ml finely chopped coriander
  • 1/2-2.40 gm salt, or to taste
  • 1 tsp Mexican chilli powder (optional)
Instructions:
  • Heat a large frying pan over medium heat and melt butter. Add onion and mushroom, cook for 5 minutes, then add garlic and cook for an additional 2 minutes.
  • Combine beef mince, oregano, cumin, and paprika in a pan. Break up the mince with a spatula and cook for about 5 minutes until the mince is cooked through. Set aside.
  • Lay a tortilla on a griddle or frying pan, add cheese on one half, top with a spoonful of mince mixture, and sprinkle more cheese. Cook on medium-low heat until the cheese melts and the tortilla crisps up, about 3-5 minutes. Fold the tortilla in half.
  • Prepare the smashed avocado by combining ripe avocado, fresh lime juice, fragrant coriander, a pinch of salt, and a sprinkle of chili powder in a bowl. Gently mash the ingredients together with a fork until desired consistency is reached.
  • After the tortilla is cooked to perfection, cut it into irresistible wedges and present it with a generous dollop of creamy smashed avocado.
