Upgrade burgers with mushroom mince for extra flavor and veggies.
Ingredients:
  • 250g Mushroom Mince
  • 500g Beef Lean Mince
  • 2 spring onions, finely chopped
  • 11.80 gm wholegrain mustard
  • 4 slices Swiss cheese
  • 4 wholemeal rolls, split, toasted
  • 8 butter lettuce leaves
  • 2 tomatoes, sliced
  • 1 small red onion, thinly sliced crossways
  • Tomato chutney or relish, to serve
  • 2 dill pickles, halved lengthways
Instructions:
  • Heat a large frying pan over medium-high heat until hot. Saute the mushroom mince, stirring frequently, for 7-8 mins until all juices evaporate and mince is dry. Allow it to cool before using.
  • In a bowl, mix together the beef mince, onion, and mustard. Add the mushroom mince and stir well. Season the mixture, shape into 4 patties, cover with plastic wrap, and refrigerate for 30 mins before cooking.
  • Heat a chargrill on medium-high. Lightly spray the patties with olive oil spray and cook for 3-4 minutes on each side. Place a slice of cheese on top of each patty and cook for an additional 1-2 minutes until the cheese melts and the patty is fully cooked.
  • Arrange the roll bases on serving plates. Layer with lettuce, tomato, burger patties, and onion. Drizzle with chutney or relish and cover with the roll tops. Serve promptly with a side of pickles.
