Bacon rarebit burger

Indulgent beef burger with crispy bacon, juicy mushrooms, oozy Cheddar, and a hint of Worcestershire sauce. Perfect for weekend gatherings, ready quickly to impress.
Ingredients:
  • 3 chestnut mushrooms
  • 125 g beef mince the best quality you can afford
  • 2 rashers of smoked streaky bacon the best quality you can afford
  • 1 soft bun
  • 2 heaped teaspoons soured cream
  • 1 gherkin
  • 25 g Cheddar cheese
Instructions:
  • Prepare the mushrooms by trimming the stalk and base off, creating a beautiful cross-section (save the offcuts for another use). Place the mushrooms cut side down in a large dry non-stick frying pan over high heat. Cook for 5 minutes while scrunching and working the mince with your hands. Separate the mince into two equal balls, flatten each to just under ½cm thick, then press a rasher of bacon onto each one. Turn the mushrooms over, place the burgers in the pan bacon side down, sprinkle with a pinch of sea salt and black pepper, and cook vigorously for 2 minutes, pressing down with a fish slice to crisp up the bacon. Flip the burgers and cook for just 1 minute on the other side. Place the mushrooms on top of the burgers, halve the bun and quickly toast it alongside. Spread soured cream on the bun, assemble the burgers and mushrooms, then add sliced gherkin. Off the heat, coarsely grate the cheese on the cleanest side of the pan, pour Worcestershire sauce on top, then tilt the pan and stir vigorously for 30 seconds until it combines into an oozy consistency. Pour the cheese mixture over the burger stack and top with the bun lid. Enjoy!
