Kid-friendly pizza pockets made with Bisquick and your choice of toppings, perfect for lunch on-the-go.
Ingredients:
  • 3 cups Original Bisquick™ mix
  • 2/3 cup very warm water (120°F to 130°F)
  • 2 tablespoons olive oil
  • 1/2 cup barbecue sauce
  • 1/2 cup shredded cooked chicken
  • 8 slices bacon, crisply cooked
  • 1/2 cup finely shredded Monterey Jack cheese (2 oz)
Instructions:
  • Preheat the oven to 450°F and line a cookie sheet with foil, then spray the foil with cooking spray.
  • Combine Bisquick mix, very warm water, and olive oil in a medium bowl until well mixed. Allow the mixture to rest for 15 minutes.
  • Gently shape dough into a ball and divide it into 8 portions. Flatten each portion and use a rolling pin to create circles that are approximately 1/8-inch thick. Transfer the circles onto a cookie sheet.
  • Combine barbecue sauce with chicken in a small bowl. Spoon 1 tablespoon of the chicken mixture onto each dough circle. Sprinkle each with crumbled bacon and 1 tablespoon of cheese. Fold over the circles and pinch the edges to seal.
  • Bake until golden brown, for about 15 to 20 minutes.
  • Serve piping hot or let cool completely, then wrap in plastic wrap and freeze until needed.
