Cheesy sour cream mashed potatoes topped with BBQ chicken, bacon, and extra cheese for a quick and decadent dinner. Ready in under an hour.
Ingredients:
  • 2 cups water
  • 3 tablespoons butter
  • 1 pouch (4.7 oz) Betty Crocker™ roasted garlic mashed potato mix
  • 3/4 cup sour cream
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 3 cups chopped cooked rotisserie chicken (about 1 lb)
  • 1 bottle (12 oz) Annie's™ Naturals organic sweet & spicy BBQ sauce
  • 1/2 cup chopped green onions
  • 6 slices bacon, crisply cooked, crumbled
Instructions:
  • Preheat your oven to 350°F and generously coat an 8-inch square (2-quart) glass baking dish with cooking spray.
  • 1. In a 3-quart saucepan, bring water and butter to a boil over medium-high heat. 2. Remove from heat and stir in potato mix, allowing it to stand for 1 minute. 3. Mix in sour cream and 1 cup of cheese until well blended. 4. Spoon the mixture into a baking dish.
  • Combine the chicken, BBQ sauce, and 1/4 cup of green onions in a medium bowl. Spread the chicken mixture over the potatoes, then sprinkle with bacon and the remaining 1/2 cup of cheese.
  • Bake for 22 to 25 minutes until the cheese is gooey and the edges are bubbling. Sprinkle with the remaining 1/4 cup of green onions before serving.
