Loaded sweet potato fries recipe

Impress guests with loaded sweet potato fries for your next barbecue.
Ingredients:
  • 750g pkt frozen sweet potato chips
  • 10.00 gm taco seasoning
  • 400g can black beans, rinsed, drained
  • 180g tasty cheese
  • 350g mixed tomatoes, chopped
  • 1/2 red onion, finely chopped
  • 40.00 ml coriander leaves
  • 21.00 gm lime juice
  • 1 ripe avocado, stoned, peeled, sliced
Instructions:
  • Preheat your oven to 220°C and line a large baking tray with baking paper. Spread out the sweet potato chips in a single layer on the tray. Sprinkle with taco seasoning. Bake for 15 minutes, flip the chips, then bake for another 10 minutes until crispy and warm.
  • Evenly spread the black beans and cheddar over the chips on the tray. Bake until the cheddar melts, about 5 minutes.
  • In a medium bowl, mix together the tomato, onion, coriander, and lime juice.
  • Transfer the flavorful chips to a serving bowl, generously top with the zesty tomato mixture and creamy avocado, then season to perfection.
