Irresistibly creamy and flavorful loaded sweet potato casserole.
Ingredients:
  • 4 large orange-fleshed sweet potatoes (3 1/2 to 4 pounds)
  • 1 pound thick-cut bacon, cut into 1/2-inch pieces
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 large egg, beaten
  • 1/2 cup sour cream
  • 3/4 cup thinly sliced green onions, plus more for garnish
  • 6 ounces sharp Cheddar cheese, shredded
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil, then arrange sweet potatoes on it and pierce them all over with a sharp knife.
  • Roast in the preheated oven until easily pierced with a knife, approximately 1 hour. Allow to cool before handling. Keep oven on.
  • Start by laying the bacon in a cold pan over medium-high heat. Let it sizzle until the fat starts to melt. Stir and lower the heat to medium. Cook further, stirring now and then, until the fat is completely rendered, and the bacon is crisped to perfection. Remove from heat, pour off the bacon fat, and set aside for later.
  • Transfer the sweet potato flesh to a mixing bowl, leaving behind the skin. Use a spoon to mash the sweet potato to your desired consistency, varying from smooth to chunky.
  • Combine the salt, black pepper, smoked paprika, egg, sour cream, green onions, half of the bacon, and two-thirds of the cheese. Mix until evenly combined.
  • Spread the mixture evenly in a shallow 2-quart baking dish, keeping the surface slightly textured. Sprinkle the rest of the bacon and cheese on top.
  • Bake the casserole in the oven until the top is golden brown, and it's hot and bubbling around the edges, for 30 to 35 minutes.
  • Garnish with extra sliced green onions and a dollop of sour cream, if preferred.
