Loaded sweet potato mash

Impress with loaded sweet potato mash topped with crispy bacon, spring onion, and cheese.
Ingredients:
  • 1kg Red Garnet sweet potato, peeled, coarsely chopped
  • 120g sour cream
  • 4 bacon rashers, trimmed, finely chopped
  • 100g cheese
  • 2 spring onions, thinly sliced
Instructions:
  • Cook the sweet potato until very tender, then transfer to a heatproof bowl. Mix in the sour cream and gently mash with a fork until well combined. Season to taste.
  • Fry the bacon in a large non-stick pan over high heat, stirring occasionally, until golden and crisp, about 5 minutes. Drain on paper towel-lined plate.
  • Preheat the grill to high heat. Mix in half of the bacon, onion, and cheese with the sweet potato mixture. Gently fold everything together. Transfer the mixture into a 6-cup (1.5L) ovenproof dish. Top with the remaining bacon, onion, and cheese. Grill for 5 minutes until the cheese is melted and golden brown.
