Loaded sweet potato fries with rump strips

Irresistible loaded sweet potato fries, ready in a flash.
Ingredients:
  • 500g beef rump strips
  • 550g sweet potatoes, sliced lengthways
  • 27.30 gm olive oil
  • 1 red onion, thinly sliced
  • 2.50 gm ground cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp chilli powder
  • 1 avocado, diced
  • Juice of 1/2 a lemon
  • 250g punnet cherry tomatoes, diced
  • 80g feta cheese, crumbled
  • 2 green onions, thinly sliced
  • Sour cream, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Preheat a sandwich press. Gently coat the sweet potato with olive oil. Cook for 8 to 10 minutes in the press, turning halfway, until just tender. Let them cool slightly and cut into 1cm thick fries.
  • Heat oil in a large non-stick frypan over medium-high heat. Sauté the onions for 2 to 3 minutes until softened.
  • Combine the beef strips with cumin, garlic powder, and chili powder in a pan. Sauté for 5 minutes, stirring occasionally, until the beef is browned and fully cooked.
  • Combine ripe avocado with a splash of fresh lemon juice and a pinch of salt and pepper, mashing until creamy in a bowl.
  • Place sweet potatoes on a plate and layer with beef, avocado, tomato, feta, and green onions. Serve with sour cream and mixed salad.
