Cheesy sweet potato nachos with veggie-loaded sweet potato fries for a healthier twist.
Ingredients:
  • 1 (about 400g) gold sweet potato, peeled, cut into batons
  • 2.50 gm Mexican seasoning
  • 40g cheddar cheese
  • 150g cherry tomatoes, quartered
  • 1/2 avocado, stoned, peeled, chopped
  • 10.60 gm lime juice
  • 40.00 ml Greek-style yoghurt
Instructions:
  • Preheat the oven to 220°C. Line a large baking tray with baking paper. Place the sweet potato on the tray, spray with olive oil, and sprinkle with Mexican seasoning. Bake for 15 minutes, flipping halfway through, until tender.
  • Top the sweet potato with a generous layer of cheddar cheese before baking until the cheese is perfectly melted, about 5 minutes.
  • In a small bowl, mix together the tomato, avocado, and lime juice.
  • Pour the tomato mixture generously over the sweet potato, then elegantly drizzle with yogurt. Finish with a sprinkle of freshly ground pepper before serving.
