Cheesy sweet potato frittata recipe

Gluten-free quick stir-fry ready in minutes, perfect for meal prep!
Ingredients:
  • 8 eggs
  • 60ml (1/4 cup) thickened cream
  • 125g (1 1/4 cups) pre-grated cheddar
  • 2 garlic cloves
  • 18.20 gm olive oil, plus extra, to drizzle
  • 2 x 250g packet sweet potato noodles
  • 150g cherry tomatoes
  • 1/2 bunch fresh basil
Instructions:
  • Heat a 25cm ovenproof frying pan over medium-high heat until hot. Preheat the grill on high.
  • As the pan and grill heat up, combine eggs and cream in a jug, season, and mix in 3/4 cup of cheddar. Crush the garlic.
  • Heat the pan until hot. Pour in the oil, swirling it around to coat the pan evenly. Add the noodles and garlic, then cook while stirring for about 2 minutes, or until the noodles begin to soften.
  • Gently pour the egg mixture into the pan and give it a quick shake. Cook for about 3 minutes, or until the frittata begins to set at the edges.
  • As the frittata cooks, halve the tomatoes and place them in a bowl. Tear the basil leaves and add them to the bowl. Season to taste.
  • Finish the frittata by generously sprinkling the remaining cheddar on top. Broil it for 3-4 minutes until it is perfectly set and golden. Add the refreshing tomato and basil salad on top. Drizzle with a bit more oil, season to your liking, and serve this delectable dish.
