Kumara and feta frittata

Try this versatile and delicious frittata recipe for a simple dinner or a convenient lunch option.
Ingredients:
  • 1kg kumara (orange sweet potato), peeled and chopped
  • 27.30 gm olive oil
  • 1 small onion, chopped
  • 150g reduced-fat feta, crumbled
  • 6 eggs
  • 80g baby spinach leaves, to serve
Instructions:
  • Preheat your oven to 200°C. Arrange the kumara on a baking tray and coat them with 2 teaspoons of oil. Roast in the oven for 40 minutes, or until they are tender.
  • In a non-stick frying pan over medium heat, sauté onion in the remaining oil for 3 minutes. Add kumara and feta, stirring to combine.
  • In a jug, whisk eggs and pepper with a fork. Pour over the kumara mixture, reduce heat to low, and cook for 5 minutes until the base is set.
  • Preheat grill to medium-high. Grill frittata for 7 minutes until golden and cooked through. Slice into wedges and enjoy with fresh spinach leaves.
