Kumara pastries

Delicious vegetarian pastries filled with sweet potato and creamy feta.
Ingredients:
  • 800g kumara, peeled, cut into 2cm cubes
  • 9.20 gm olive oil
  • 1 leek, halved, thinly sliced
  • 200g feta, crumbled
  • 125.00 ml grated tasty cheese
  • 20.00 ml basil leaves, chopped
  • 0.63 gm ground cumin
  • 4 sheets puff pastry, halved diagonally
  • 1 egg, lightly beaten
Instructions:
  • Preheat your oven to 200°C and prepare 2 large baking trays by lining them with baking paper.
  • 1. Boil kumara in a saucepan filled with water over medium heat until tender, about 7 minutes. Drain and let cool.
  • In a frying pan over medium heat, warm oil. Add leek and sauté until soft, around 2 minutes. Remove from heat and let cool.
  • Mix together the sweet potato, leek, assortment of cheeses, fresh basil, cumin, and season with salt and pepper.
  • Spread 1/2 cup of filling on one side of each pastry piece. Fold over and press edges to seal. Transfer to baking trays, brush with egg wash, and bake until golden, about 10 minutes. Serve hot.
