Beef and kumara pasties

Handheld beef and sweet potato pastries perfect for game day with friends. Cheers to the footy finals!
Ingredients:
  • 1 brown onion, finely chopped
  • 600g beef mince
  • 7.50 gm curry powder
  • 69.38 gm tomato paste
  • 300g kumara (orange sweet potato), peeled, grated
  • 4 sheets puff pastry, thawed
Instructions:
  • Heat oil in a non-stick frying pan over medium heat. Cook onions until soft and light golden, then increase heat to high and add mince, cooking until browned.
  • Combine curry powder, tomato paste, kumara, and 1/2 cup water in a frying pan. Stir well and cook for 10 minutes until the liquid has evaporated. Season with salt and pepper, then allow it to cool completely.
  • - Preheat your oven to 200°C and lightly grease a baking tray. - Cut each pastry sheet into squares, then spoon 1/4 cup of the mince mixture onto the center of each square. - Fold in half to create triangles and seal the edges by pinching or pressing with a fork. - Place the triangles on the prepared baking tray and bake for 25 minutes, or until they are puffed and golden. - Serve your delicious turnovers with tomato sauce, if desired.
