Delicious vegetarian patties perfect for any day!
Ingredients:
  • 500g kumara (orange sweet potato), peeled, cut into 2cm pieces
  • 420g can chickpeas, drained, rinsed
  • 82.50 ml couscous
  • 1 tsp garam masala
  • 1 egg, lightly beaten
  • 13.80 gm olive oil
  • 125.00 ml low-fat natural yoghurt
  • 40.00 gm mango chutney
  • 60g salad leaves, to serve
Instructions:
  • Arrange the kumara in a single layer on a microwave-safe plate, cover with a lid or microwave-safe cover, and microwave on HIGH for 3 to 5 minutes until just tender. Drain the kumara, then transfer to a mixing bowl. Combine with chickpeas and mash the mixture until it is almost smooth.
  • Combine the couscous, garam masala, garlic, egg, and salt with the kumara mixture until fully mixed. Shape the mixture into 8 patties that are 1.5cm thick using damp hands.
  • In a large non-stick frying pan over medium heat, sear patties for 3 to 4 minutes on each side until they turn golden and are heated through.
  • Mix yogurt and chutney in a small bowl. Serve patties with mango yogurt and salad leaves.
