Sweet potato briks (spicy sweet potato parcels)

Indulge in a delicious vegetarian dish - sweet potato wrapped in filo pastry.
Ingredients:
  • 2 small sweet potatoes, peeled, cut into 2cm cubes
  • 27.30 gm olive oil
  • 1/2 tsp dried red chilli flakes
  • 1/2 tsp ground coriander
  • 1.25 gm ground cumin
  • 1.25 gm ground cinnamon
  • 1 small onion, grated
  • 1 egg, lightly beaten
  • 16 sheets filo pastry
  • 120g unsalted butter, melted
Instructions:
  • Heat your oven to 200°C.
  • Coat potatoes in oil, bake until tender. Mash in a bowl with chili, spices, onion, and egg. Season with salt and pepper. Let cool.
  • Lay out a sheet of filo, brush with butter. Repeat with another sheet. Continue layering until you have 4 sheets. Cut the stack into 4 strips. Place 2 teaspoons of filling at the bottom of each strip. Fold into triangles, brushing with butter as you go. Repeat with the remaining sheets. Brush the triangles with butter and bake until golden, about 15 minutes.
