Spicy chorizo and sweet potato hash - perfect with eggs.
Ingredients:
  • 1 medium sweet potato, peeled and cut into 1/2-inch cubes
  • 1 teaspoon chopped fresh rosemary
  • 1 medium onion, diced
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon cayenne pepper
  • 1 link Spanish chorizo sausage, casing removed, chopped
Instructions:
  • In a skillet over medium heat, warm oil until shimmering. Add sweet potato and saute, stirring occasionally, until lightly browned, about 5 minutes. Sprinkle with rosemary, salt, and pepper. Continue cooking until sweet potato is tender, about 5 minutes.
  • Sauté onion, cumin, and cayenne pepper until onions are soft for 5 to 7 minutes. Then, add chorizo and turn up the heat to medium-high. Keep cooking and stirring until the potatoes are tender (not mushy) and brown, and the chorizo becomes crisp for 1 to 2 minutes.
