Chorizo and sweet potato peri-peri hash

Versatile and delicious hash for any meal!
Ingredients:
  • 65ml PERi-PERi Sauce
  • 2 poached eggs
  • 2 sweet potatoes, peeled and diced
  • 100g chorizo, diced
  • 72.80 gm olive oil
  • 1 red onion, diced
  • 1 red capsicum, diced
  • 50g crumbled feta
  • Small bunch chopped parsley
Instructions:
  • In a large frying pan, heat oil and sauté onion and red capsicum for 5 minutes.
  • Reduce the heat to medium, then add the chorizo and sweet potato. Cook for 12-15 minutes until the sweet potato is tender.
  • Mix in a generous amount of vibrant PERi-PERi sauce and sprinkle fresh parsley on top.
  • Top the dish with a poached egg and sprinkle with crumbled feta.
