Savory sweet potato dumplings with chorizo, cilantro, and cheese, paired with a tangy Thai chili peach sauce - perfect for make-ahead meals.
Ingredients:
  • 2 sweet potatoes, peeled
  • 1 pound chorizo sausage
  • 0.5 cup grated Cheddar cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 (16 ounce) package wonton wrappers
  • 1 cup peach jam
  • 1 cup sweet Thai chili sauce
  • 2 teaspoons vegetable oil, or as needed
Instructions:
  • In a large pot, immerse sweet potatoes in salted water and bring to a boil. Let simmer over medium-low heat until tender, approximately 20 minutes.
  • Heat a large skillet over medium-high heat. Brown and crumble chorizo in the hot skillet for 5 to 7 minutes. Allow to cool.
  • After draining the sweet potatoes, mash them and allow them to cool for 10 to 15 minutes until safe to handle.
  • Mix together the mashed sweet potatoes, chorizo, Cheddar cheese, and cilantro to create a flavorful filling. Prepare a dumpling station with a cooling tray and a bowl of water for sealing.
  • Spoon 2 teaspoons of filling onto a wonton wrapper, moisten the outer edge, and press to seal. Transfer dumpling to a tray. Repeat process with remaining filling and wrappers. Chill dumplings for 30 minutes before storing in a zip-top bag for freezing.
  • Mix together the peach jam, Thai chili sauce, and fresh cilantro to create a flavorful dipping sauce.
  • Heat oil in a pan over medium to medium-high heat, then pan-fry the frozen dumplings with a splash of water for 10 to 12 minutes until heated through.
