Creamy chorizo and sweet potato salad

Delicious and satisfying family-favorite salad.
Ingredients:
  • 850g sweet potato, peeled, cut into 2-3cm pieces
  • 1 x 125g Classic Chorizo, thinly sliced
  • 1 small red onion, finely sliced
  • 2 zucchini
  • 80g Greek feta, crumbled
  • 40.00 ml pine nuts, toasted
  • 82.50 ml fresh mint leaves
  • 59.40 gm garlic aioli
  • 20.00 ml white wine vinegar
  • 6.80 gm maple syrup
Instructions:
  • Cook the sweet potato until tender yet firm. Drain and let it cool. In a non-stick frying pan over medium heat, cook the chorizo for 2-3 minutes on each side until golden and crispy.
  • In a large bowl, combine grated zucchini ribbons, onion, feta, pine nuts, mint, sweet potato, and chorizo. Season with salt and pepper, gently toss to mix well, and discard the center of the zucchini.
  • Combine the aioli, vinegar, and syrup in a small bowl and whisk until creamy. Drizzle the mixture over the salad before serving.
