Goat Cheese Pasta with Chorizo and Cherry Tomatoes

Savory chorizo, creamy goat cheese, and sweet cherry tomatoes make this pasta a year-round delight.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 0.25 cup olive oil
  • 3 stalks green onion
  • 1.5 pints cherry tomatoes, quartered
  • 0.5 cup finely chopped fresh basil
  • 3 tablespoons balsamic vinegar
  • 9 ounces smoked chorizo sausage links, sliced
  • 2 (8 ounce) packages goat cheese
Instructions:
  • Season a large pot of water with 1 tablespoon of salt; bring to a boil. Add penne and olive oil, cook until al dente, about 11 minutes, stirring occasionally.
  • While the pasta is boiling, prepare the green onions: diagonally slice the green parts and thinly slice the white parts. Combine them in a bowl with cherry tomatoes, basil, and vinegar.
  • Place the chorizo in a separate bowl and chop the goat cheese. Crush the goat cheese and mix it with the chorizo.
  • Transfer drained pasta to a large bowl and mix in the chorizo-goat cheese mixture until cheese is melted and pasta is coated. Add the vegetables and stir to combine.
