Colorful pasta with tangy goat cheese, juicy tomatoes, fresh spinach, tossed in olive oil, topped with crumbled goat cheese. Serve warm.
Ingredients:
  • 10 ounces spinach, rinsed
  • 1 (16 ounce) package bow tie pasta
  • 0.25 cup olive oil
  • salt and pepper to taste
  • 2.5 cups cherry tomatoes, quartered
  • 8 ounces crumbled goat cheese
Instructions:
  • Strip stems from spinach leaves and stack them neatly. Slice into fine, long strips instead of squares and set aside.
  • Boil a pot of salted water and cook pasta until al dente, about 8-10 minutes. Drain and transfer to a large bowl.
  • Gently toss spinach and tomatoes with pasta, drizzle with olive oil, and season with salt and pepper to taste.
  • Sprinkle crumbled goat cheese on top and enjoy while warm or at room temperature.
