Create a quick and delicious sweet potato noodle dish with just 5 ingredients in 20 minutes!
Ingredients:
  • 225g broad bean
  • 2 chorizo sausages, thinly sliced diagonally
  • 250g pkt Sweet Potato Noodles* (see tip)
  • 190g jar basil pesto
Instructions:
  • In a saucepan of boiling water, blanch the broad beans for 2 minutes until heated through. Immediately cool them in cold water, drain well, and then gently peel.
  • Preheat a frying pan over medium-high heat. Sear the chorizo, turning occasionally, for 2-3 minutes until golden brown. Remove to a paper towel-lined plate.
  • Sauté the sweet potato noodles in the pan for 3 minutes until tender. Divide them among serving bowls. Pour cream into the pan and bring to a boil. Cook for 1-2 minutes until slightly thickened. Stir in half of the pesto until well combined.
  • Place the chorizo and broad beans over the sweet potato noodles in the bowls. Drizzle with the cream mixture and add dollops of the leftover pesto. Serve promptly.
