Vegan sweet potato noodles with crispy kale

Create delicious swoodles by spiralizing sweet potatoes, then sauté with garlic, chili, lemon, and crispy kale.
Ingredients:
  • 1 bunch kale
  • 40.00 ml pine nuts
  • 60ml (1/4 cup) extra virgin olive oil, plus extra, to serve
  • 2 large garlic cloves, crushed
  • 2 tsp chilli flakes
  • 1 lemon, rind finely grated
  • 700g sweet potato, peeled, cut into noodles using a spiraliser
Instructions:
  • Preheat your oven to 150C/130C fan forced. Tear kale into bite-sized pieces, removing the stems, and spread on 2 large baking trays. Drizzle with olive oil and bake for 10-12 minutes until crispy. Allow to cool.
  • Spread pine nuts on a baking tray and roast until golden, about 3-5 minutes. Allow to cool before using.
  • In a large, deep frying pan over medium-low heat, let the oil, garlic, chili, and lemon rind mingle for 3 minutes until the garlic becomes fragrant. Turn up the heat to medium-high, add the sweet potato noodles, and cook for 5 minutes until tender, tossing them occasionally. Finally, mix in half of the kale and combine everything together.
  • Assemble individual serving bowls with the noodle mixture. Sprinkle crumbled kale and pine nuts on top. Finish with a drizzle of extra olive oil for added flavor.
