Vegan sweet potato casserole - a healthier, dairy-free twist for Thanksgiving.
Ingredients:
  • cooking spray
  • 3 large sweet potatoes
  • 0.25 cup vegan butter
  • 0.5 cup almond milk
  • 0.33333334326744 cup maple syrup
  • 0.25 cup orange juice
  • 0.75 teaspoon ground cinnamon
  • 0.75 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.75 cup chopped pecans
  • 0.5 cup brown sugar, packed
  • 0.33333334326744 cup unbleached all-purpose flour
  • 2 tablespoons maple syrup
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a casserole dish with nonstick cooking spray.
  • In a large pot, boil the potatoes in salted water until tender, about 10 to 20 minutes. Drain and return to the pot. Mash with vegan butter to your liking. Stir in almond milk, maple syrup, orange juice, vanilla extract, cinnamon, nutmeg, and salt. Transfer the mixture to a casserole dish.
  • Mix together pecans, brown sugar, flour, vegan butter, and maple syrup in a bowl before sprinkling it over the casserole.
  • Bake in the hot oven for approximately 45 minutes until heated through.
