Delicious vegan pudding made with spiced creamy brown rice and sweet potato, perfect for breakfast or a snack.
Ingredients:
  • 2 medium sweet potatoes
  • 0.5 cup uncooked brown rice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and poke sweet potatoes all over with a fork before placing them on a baking sheet.
  • Roast in the heated oven until potatoes are fork-tender, for about 50 minutes to 1 hour.
  • Simmer brown rice in boiling water on low heat, covered, for 45-50 minutes until tender and liquid is absorbed.
  • Take the sweet potatoes out of the oven and peel off the skin once they have cooled down.
  • Combine sweet potato flesh and cooked rice in a food processor, then blend with soy milk, maple syrup, cinnamon, nutmeg, and vanilla until velvety smooth. Enjoy hot, warm, or chilled.
