Hearty pilaf, the perfect side dish for your healthy meal.
Ingredients:
  • 18.20 gm olive oil
  • 1 small brown onion, chopped
  • 2 celery sticks with leafy tops attached, chopped
  • 315g (1 1/2 cups) pearl barley
  • 1L (4 cups) water
  • 3 tsp vegetable or chicken style stock powder
  • 1/2 medium (about 350g) orange
  • Sweet potato (kumara), peeled, cut into 1cm pieces
  • 250g (1 1/2 cups) frozen broad beans, thawed
  • 125.00 ml chopped fresh coriander leaves and stems
Instructions:
  • In a large saucepan over medium heat, sauté onion, celery, and garlic in olive oil until onion softens, about 5 minutes.
  • Combine barley, water, and stock powder in a pot. Bring to a boil over high heat, then lower heat to simmer, cover, and cook for 40 minutes. Add sweet potato and broad beans, then continue cooking covered, stirring frequently, until sweet potato is tender.
  • Incorporate chopped coriander and generously season with salt and pepper. Serve promptly.
