Cozy chicken barley soup with sweet potatoes, perfect for chilly autumn days. Enjoy with crusty bread.
Ingredients:
  • 2 parsnips, diced
  • 3 cups sliced carrots
  • 1 Spanish onion, diced
  • 0.5 cup diced celery
  • 3 cloves garlic, minced
  • 2.5 quarts chicken stock
  • 3 cups diced cooked chicken breast
  • 1.25 cups barley
  • 4 large sweet potatoes, peeled and diced
  • 0.5 cup chopped fresh dill
  • salt and ground black pepper to taste
Instructions:
  • In a large heavy stockpot over medium heat, gently sauté onion, celery, and garlic in olive oil until onion is slightly tender, for about 8 minutes.
  • Combine chicken stock, chicken, carrots, parsnips, and barley with the onion mixture, then bring to a boil. Simmer on low heat until the barley is slightly tender, approximately 30 minutes.
  • Combine sweet potatoes into the simmering soup until soft along with barley, taking around 30 minutes. Lastly, add dill, salt, and pepper to taste.
