Delicious tomato and barley soup with onions, celery, carrots, garlic, and chicken broth.
Ingredients:
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 teaspoons minced garlic
  • 2 tablespoons vegetable oil
  • 2.5 cups water
  • 2 tomatoes, diced
  • 1 (14.5 ounce) can peeled and diced tomatoes with juice
  • 1 (10.75 ounce) can chicken broth
  • 0.25 cup uncooked barley
  • 0.125 teaspoon ground black pepper
Instructions:
  • Sauté onions, celery, carrots, and garlic in oil in a large saucepan over medium heat until veggies are almost tender, 5 to 10 minutes.
  • Combine water, fresh tomatoes, canned tomatoes, chicken broth, barley, and black pepper for a flavorful base.
  • Mix well and bring to a boil. Lower the heat and let it simmer until the barley is tender, about 35 to 40 minutes.
