Tomato, Beef and Barley Soup

Elevate tomato soup with savory beef, wholesome barley, and colorful veggies.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 2 cans (19 oz each) Progresso™ Vegetable Classics hearty tomato soup
  • 2 cups water
  • 1/2 cup uncooked quick-cooking barley
  • 1 cup sliced celery
  • 1 cup frozen mixed vegetables (from 1-lb bag)
  • 6 tablespoons shredded fresh Parmesan cheese
Instructions:
  • In a 4-quart saucepan or Dutch oven, sauté the beef over medium-high heat for 5 to 7 minutes, stirring occasionally, until fully cooked; then drain any excess fat.
  • Combine the soup, water, barley, and celery in a pot. Bring the mixture to a boil, stirring occasionally. Reduce the heat to low and simmer uncovered for 15 minutes until the barley is tender, stirring occasionally.
  • Add the frozen mixed vegetables and stir well. Cook for 6 to 7 minutes, occasionally stirring, until the mixture is hot. Finish off each serving by sprinkling 1 tablespoon of cheese on top.
