Sausages with savoury tomato pearl barley

Cozy up with a comforting tomato, barley, and sausage stew, ideal for chilly winter days.
Ingredients:
  • 1 brown onion, finely chopped
  • 220.00 gm pearl barley (see note)
  • 510.00 gm chicken style liquid stock
  • 125.00 ml semi-dried tomatoes, roughly chopped
  • 500g lean beef sausages
  • 125.00 ml flat-leaf parsley leaves, roughly chopped
  • Lemon wedges, to serve
Instructions:
  • Heat 1 1/2 tablespoons of oil in a non-stick saucepan over medium-high heat. Cook onions for 3 to 4 minutes until soft. Add barley and stir well to coat. Add stock, 1 cup water, diced tomatoes, and semi-dried tomatoes. Bring to a boil, then simmer uncovered for 30 minutes until barley is tender.
  • Heat the rest of the oil in a non-stick pan over medium heat, then cook sausages for 8-10 minutes until golden brown and fully cooked. Transfer to a cutting board and slice into thick pieces.
  • Combine the sausages with the flavorful tomato mixture and heat for 1 to 2 minutes until warmed. Season with salt and pepper, then mix in fresh parsley. Serve in bowls with lemon wedges and crusty bread on the side.
