Indulgent sausage ragu over creamy polenta, a comforting family favorite with a dose of veggies in each serving.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 500g Italian-style pork sausages, casings removed
  • 1 brown onion, finely chopped
  • 4 garlic cloves, crushed
  • 1/2 tsp dried chilli flakes
  • 20.00 ml chopped fresh thyme
  • 44.40 gm tomato paste
  • 400g can borlotti beans, drained, rinsed
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • Small fresh basil leaves, to serve
  • 515.00 gm milk
  • 112.50 gm instant polenta
  • 50g butter, chopped
  • 82.50 ml finely grated parmesan
Instructions:
  • In a large deep frying pan, heat oil over medium-high heat. Add the sausage mince and cook for 7 to 8 minutes, using a wooden spoon to break it up until browned. Add the onion and cook for 5 minutes until softened. Stir in garlic, chilli, thyme, and paste, and cook for an additional minute until fragrant.
  • Combine the beans, tomatoes, and 1/2 cup of water in a pot. Season generously with pepper. Bring to a gentle boil, then reduce heat to low. Allow it to simmer, stirring occasionally, for about 5 minutes until the mixture thickens.
  • Prepare the Creamy Polenta by bringing milk and 2 cups of cold water to a boil in a saucepan. Slowly add polenta while stirring continuously until well combined. Reduce heat and cook for 2 minutes until thickened. Remove from heat and mix in butter, parmesan, salt, and pepper.
  • Top creamy polenta with a flavorful sausage ragu and garnish with fresh basil leaves before serving.
